BAR KAP’s Non-Alcoholic Cocktail Menu, Explained
Ask for a non-alcoholic drink in most bars and you will be handed something apologetic. A juice with a garnish. A soda with a story attached. The gap between what the room is drinking and what you are holding is usually obvious within one sip.
Our four zero-proof serves were built to close that gap. Each chapter of the menu carries one, so a guest who is not drinking alcohol still moves through the same house story as everyone else at the table. They sit alongside the rest of our creative cocktails, not underneath them, which is the same standard we set for everything else at A Modern Cocktail Bar inside a gazetted National Monument.
Built, Not Substituted
Removing alcohol removes weight, warmth and length, so those have to come back from somewhere. Ours come from aged tea, vinegar, salt, roasted grain and dried peel, ingredients that carry tannin and savoury depth on their own terms. The construction is the same as a spirited serve: something to give structure, something to cut it, something to hold the finish.
Four Serves, Four Chapters
The Gong Fu Merchant opens the Kapitan chapter. Aged tea, non-alcoholic amaro, vinegar, longan, osmanthus and honey give a tea-led, floral drink with a long, lightly tart finish, and the name points to tea handled with discipline instead of ceremony for its own sake.
Last Call belongs to the Station Master era. Oolong, roasted barley, honey, chenpi, saline and gold make it golden and restoring, the kind of drink that suits the end of a long week.
Sister Act, from the Order chapter, goes the other way entirely: cucumber, white tea, rojak flower, sea salt and bubbles, crisp and quietly saline.
TCM Drawer No.3 closes the set in the Dynasty chapter. Soy milk, ginger, honeydew, chestnut honey and gula melaka give it a soft, creamy body and a warm ginger edge, served in ceramicware. It is a drawer of ingredients treated as flavour, with no medical claim attached. It is also our most popular non-alcoholic pour, and like the rest of our zero-proof list, it can be served with a dash of spirit if you would like one.
What Changes at the Table
Parity is a service question before it is a recipe question. Our team describes these drinks by flavour and by the chapter they belong to, never as the option for people who are not drinking. The words “just” and “only” do not appear.

A drink is only half the table.
